Description
If you can’t tell my the amount of picanha options we have on the site, Picanha is one of my favorite cuts. Generally speaking, it’s easy to cook, super juicy, and always has a good tender/chew ratio. Despite all the options, each example of the Picanha we offer is noticeably different. This one is the holy grail of Picanha. Not only is it A5 Wagyu (the highest grade given to Japanese beef), but it’s also dry aged for 30 days. It is nearly impossible to find this beef anywhere else. “Why does it matter if it’s dry aged?” You may ask. Dry aging accomplishes two main things. It increases tenderness, and (more importantly) intensifies flavor. It creates a nutty flavor that is unmistakable. If you’ve ever been to a classic NY steakhouse, you’ll be able to recognize it, even just by the smell. If you haven’t tried dry aged beef, then this is the time. This is definitely the most insane steak we currently offer. It’s very rich and buttery as it’s A5 Wagyu, but also has an insane depth of flavor that can only be achieved with aging.
