300g Wagyu scotch fillet steak
2 giant mushrooms
1 avocado
1 rasher of bacon
2 slices of pancetta
A bunch of chicken skin
An egg
Aged cheddar
Truffle oil
Here’s the wagyu scotch, $90 bucks a kg, which I guess is somewhat better value than $195/kg…
Rub truffle oil into the ‘shrooms, grill them a bit, cover the inside in mooshed garlic, then a layer of cheese, then the pancetta. Grill in between each of these steps.
Put the cooked steak on the grilled mushroom bun thing.
Cover that in chicken skin and bacon.
If you like it then you better put an egg on it. And some avocado.
The finished product…
Deliciously greasy, but really waaaay too many flavours to be able to focus on any given one. And in the end the whole point was to make a burger that can be eaten conveniently but without using bread buns, so on that level it’s a failure – and one hell of a way to blow $60 bucks.
